To make Lemon Cookies in a Mason Jar, you'll need a few ingredients:

1 cup flour
1/2 cup butter (softened)
1/4 cup confectioners sugar
Cooking spray
2 eggs
1 cup granulated sugar
1/2 tsp. baking powder
1/4 tsp salt
2 Tbsp lemon juice

Heat the oven to 350 degrees F.  Measure the flour by sifting.  Blend the flour, butter, confectioners sugar thoroughly.  Drop 2-3 Tablespoons into the bottom of mason jars which have been sprayed with cooking spray.  Using a Tart Tamper, press the dough until flat on the bottom of the mason jars .  Place the jars on a cookie sheet and bake for 20 minutes.  Beat the remaining ingredients together.  Pour over the crust and bake for 20-25 minutes more.

Recipe makes 6 mason jar treats.  You can also omit the mason jars and bake in a 8x8 inch square pan.
